nutty by nature cookies


Nutty by Nature.  These are my nutty by nature cookies and I’m obsessed with them!  Gluten free + Grain Free, Vegan and lightly sweetened.  They’d make really good ice cream sandwhiches. Handmade bricks with flower rock decorations inspired these cookies. My inner Montessori Ojai hippie child is coming out in full force with these.

 

Recipe

MAKES: 30 cookies

INGREDIENTS:

  • 3 1/2 cups (175g) blanched almond flour 

  • 1/4 cup (60g) cocoa powder or raw cacao powder 

  • 1/4 teaspoon (1.5g) salt 

  • 1/4 teaspoon (1.5g) baking soda 

  • 1/3 cup (40g) neutral oil (such as grapeseed, canola, sunflower or safflower oil)

  • 3 tablespoon (65g) maple syrup or honey

  • 1/2 tablespoons (7g) vanilla extract

  • Raw nuts and seeds for designs: pecans, pistachios, almonds, sunflower seeds, pumpkin seeds, brazil nuts, cashews, pine nuts, etc.

INSTRUCTIONS:

In a medium bowl, mix dry ingredients together.  Make a well in the center and pour wet ingredients and then mix to combine. 

Remove the dough from the bowl and place on o e side of a large sheet of parchment paper. Place another piece of parchment on top and roll the dough until it’s 1/3” thick. Remove the top piece of parchment paper and stamp out your cookies with a 2-3” round cookie cutter before artfully decorating each round with raw seeds and nuts. You may need to cut the nuts in half. Putting aside dough scraps to re-roll. Once the nuts and seeds have been placed, put a sheet of parchment paper on top and gently roll over each cookie to fix the designs in place. 

One by one, remove your cookies with an offset spatula and place on a parchment-lined cutting board or tray. Once you have filled up your cutting board with cookies, put into the freezer for 1-3 hours or overnight and up to 48 hrs. 

When you’re ready to bake, preheat the oven to 350°F. Line a baking sheet with parchment paper and arrange the cookies with flower sides facing up, leaving ¼” space between each. Place the baking sheet in the center rack of the oven and bake for 8-10 minutes; watch out because these high oil content cookies bake quickly!

Please note that if these are transported to a picnic the designs may fall off.  I like to serve them right after I bake them for optimal prettiness.
